Sweet Chili Black Bean Burgers and Sweet Potato Fries

Sweet Potato Fries:

Ingredients:

  • 2 large sweet potatoes
  • 3 TBSP balsamic vinegar
  • 1-2 TBSP maple syrup
  • 1tsp red pepper flakes
Cut your sweet potatoes into wedges, and lay on a baking sheet using parchment paper, or a silicon baking mat. 

Combine the balsamic vinegar, maple syrup and sweet chili and drizzle over top.

 Bake at 400 deg for 45 min

Sweet Chili Black Bean Burgers
Ingredients:
  • ½ onion chopped
  • 1 cup oatmeal
  • ½ can diced tomatoes
  • 4 TBSP sweet chili sauce
  • 1 tsp cumin
  • 1 tsp chili spice
  • 1 tsp smoked paprika
  • salt and pepper to taste

 Using a food processor, pulse all ingredients until blended well. Be careful not to over-mix. If there is too much liquid, add more oatmeal.

Form into patties and bake at 400 deg for 30 min. 

Add whatever fixings you like on top. Lettuce, sprouts, a slice of avocado, tomato and sweet chili drizzled on top.

TIP: Double your batch and freeze your patties. Simply form into patties on a baking sheet and stick in the freezer for 20 minutes or until they are firm enough. Wrap them in freezer paper and place into a freezer bag for when you need a quick meal.
